古来から伝わる蜂蜜のビール・ミード Traditional Mead – Historically Speaking

その昔、ヨーロッパの神々や伝説の王が飲んでいたとされる飲み物が、ミードと呼ばれるお酒。ミードは、蜂蜜を使って発酵させた、ビールに似たお酒ですが、蜂蜜は世界中どこでも採れるため、ミードの美味しさを伝えるお話が長い歴史の中に数多く残されています。

夏が短いヨーロッパ北部では、糖質を含む果物や穀物を収穫できる期間が限られているため、古くから蜂蜜が発酵酒の主な材料として用いられていました。やがて、穀物や果物を使った発酵酒が北欧以南の地域で作られるようになり、私たちの愛するビールが生まれます。また、ぶどうや他のフルーツの果汁を使って、ワインやサイダーが作られるようにもなりました。こうした発酵酒が北欧にも輸出され始めると、ミードは次第にこれらのお酒に取って代わられるようになってしまいました。

北海道・小樽市の小樽ビールは、Beer Hornのためだけに、古来からドイツに伝わるミードを伝統的な製法に基づいて醸造しました。蕎麦の花の蜜から採れる蜂蜜を使ったミードは、明るい色が美しい、微発泡タイプのお酒です。蜂蜜に含まれる単糖類はイーストによって発酵されやすいのですが、炭酸ガスを留めるためのたんぱく質が少ないため、ミードは微発泡となるのです。

「小さなヘッド」
一般的に、ビールがしっかりと泡立つためには、ビールの中にある程度のたんぱく質が必要です。炭酸ガスがたんぱく質に結びつくことによって、Beer Hornのビールのあのクリーミーな泡(ヘッド)が生まれるのです。ハニー ホーンのアルコール度数は9度で、非常にフルーティーな味わいです。きっと皆さんのお気に召すことでしょう。1度といわず、2度、3度と味わっていただければ、と思いますので、この季節のビールが売り切れる前に、3月は是非Beer Hornに足をお運びください。

熟成ミード
Beer Hornでは、去年醸造したミードの樽をいくつか残しておき、8ヶ月間さらに熟成させてみました。熟成させたミードは、素晴らしい味わいです!この春に出来上がったミードも少しだけ残しておき、さらに熟成させて今年の秋に小さなテイスティング会を開催できたら、と考えています。興味のある方は是非スタッフまでお知らせください!サンタクロースのように、皆さんのお名前をリストにしておき、秋にテイスティングの集いを開催できる場合には、皆さんにお知らせします!

3月14日(金): ハニーホーン発売開始

From the mysts of time, the first fermented beverage, the one draught which has been the fabled drink of gods and kings was Mead. Mead has always been made from honey, the only universal source of sugar on our planet and has been the subject of stories throughout history extolling the virtues of this fermented beer-like drink.

Generally, the Northern-most areas of Europe had no fermentable sugar source such as fruits or grains because the growing season was too short, therefore honey was the main source used for fermented drinks. As the people living in warmer areas soon discovered, grains could be made into a fermentable liquid that eventually became the beer we all know and love. Others found that grape juice and other fruit juices were fermentable into wines and ciders. Over time, these products were exported to the Northern countries that had to depend on Honey Beer therefore Mead production was reduced considerably.

Otaru Beer has produced this extremely-old, traditionally-styled German Mead just for Beer Horn. We start with Honey made from Soba flower’s nectar. The resulting Honey Beer is very light in color and lightly effervescent. Honey is a source of simple sugars that are readily fermented by yeasts. However, there is little protein available in the final product and therefore very little CO2 gas is able to stay behind as there is nothing for it to hang on to in the Beer itself.

“Small Head”
Generally speaking, in order to have the nice foam you have come to expect in our beer, it needs to contain a good quantity of protein. This is what provides the nice creamy heads on all our Beer Horns. Honey is severely lacking in proteins when compared to grain, therefore the foam may not be comparable to our normal Horns. The alcohol content is approximately 9%, and has a very fruity character. Overall this is a very special Mead that you will really enjoy! We hope you will have a chance to enjoy our Seasonal Beer for March several times before it sells out!

“Aged Mead”
Last year we were able to hold back a few kegs of the Honey Horn to age for eight months. The results were spectacular! We will try to do the same with this batch and perhaps have a small tasting this Fall!
